SYDNEY INTERNATIONAL FOOD FESTIVAL AT THE COUNTRY TRADER
On the 8th of October 2009, The Country Trader and Katering created the perfect fusion: French-Vietnamese Gastronomic Feast in the extraordinary antique furniture showroom.

It was the first time The Country Trader, well known for organising magnificent events, was open to the public for dinner and set up as a chic French restaurant for a hundred guests.

Geoff Clark knew exactly how to blend the European antique furniture with Kate White’s Vietnamese-French cuisine.

Shallots, bok Choy, baby capsicums and candles mingled over French rust coloured linen sheets, and combined Asian and western tableware; it was the perfect arrangement for the fourteen different styles dining tables with mismatching elegant chairs.

 

Guests were welcomed with a glass of Peteluma Croser Non Vintage Sparkling wine and walked through the various spaces of the antiques showroom.

 

Dinner started with a degustation of prawn rice paper rolls, quail salad, mussels with lemongrass, chilli and garlic, caramelized silver perch and other entrees that evoked the French colonies in Indochina.

Katering had prepared a table banquet including, braised duck with shitake mushrooms and wok seared sirloin with soy and sesame

For dessert, guests were asked to walk to the main area where they could find an elaborate display of fruit with a variety of mangoes, banana, coconut, papaya and lychees. They collected a glass and filled it with fruit of their choice, tapioca, ice cream flavoured custards and syrups.

 

The evening was fabulous. All the guests enjoyed the sophisticated dinner at the sumptuous showroom.

A unique, decadent, inspiring dinner amongst the fabulous antiques of The Country Trader.   Events guru and star chef Kate White of Katering will prepare a French-Vietnamese banquet, where a classic entree such as wok seared sirloin with soy and sesame or spiced quail salad  flows through to a generous banquet featuring such exotic dishes as masterstock chicken, braised duck and caramelized perch. Dine on 18th century tables seated on rare French chairs, drinking Croser Non Vintage Sparkling Wine out of vintage crystal glasses and beautiful St Hallett Eden Valley Riesling and St Hallett Gamekeeper's Shiraz Grenache matched to this unique cuisine.

Kate White
Kate White initiated her career in the catering business from home in the early 1990’s, establishing herself within Sydney boardrooms. An initial cooking course in London at The Prue Leith’s Cooking School in 1988 gave her the foundation. As her reputation grew, so did the demand for private dinners, cocktail parties and weddings.  
Kate set-up a café and commercial kitchen at Bondi in 1997 registered Katering Pty Ltd as a Gold Cater of the NSW Restaurant and Catering Association. A year later, Kate’s husband, Mark White joined the business, which today is based in Surry Hills with a team of over 30 staff and is known as one of Sydney’s prestigious catering companies.  
Kate is passionate about menus that are innovative in taste, food styling and presentation and will always ensure that the final product is dynamic in colour and texture. She encounters many clients who have requests in terms of a theme or the atmosphere they wish to achieve on the evening.  Kate believes in combining the food with all elements of an event to create the perfect atmosphere.  
Kate’s events over the years have ranged from intimate dinners for 6, to extravagant soirees for 200, to corporate events for 1000, beautiful Country Weddings. She is dedicated to providing a service that not only meets her client’s needs, but exceeds their expectations.
